This is a lovely recipe that combines the sweet taste of the peas, with the yummy crunch of the cashews. I love the taste of the salty nuts in with foods that are sweet, and this recipe is a great one for it!
Heat one tablespoon of olive oil in a wok or large frying pan (I prefer the wok for ease of mixing ingredients).
Add 500g trimmed snow peas and one sliced garlic clove, and stir-fry for 30 seconds until the snow peas are bright green. Add 2 tablespoons of water, 1 tablespoon of light soy sauce, and 1/2 teaspoon of sugar, and cook for 1 minute until the peas are tender but still crisp.
Serve immediately topped with 40g (1/4 cup) chopped cashew nuts.
